Chicken Fajita Quesadillas

Ingredients
- 2 tbsp olive oil
- 1 medium onion (diced)
- ½ yellow bell pepper (diced)
- ½ green bell pepper (diced)
- ½ red bell pepper (diced)
- 1 tsp paprika
- 2 chicken breasts
- Fajita spice mix
- 200g grated cheddar cheese
- 8 tortillas

Heat 1 tbsp olive oil in a skillet, add diced onion and bell peppers, and sprinkle with paprika.

Cook on medium heat for a few minutes and set aside.

Add 1 tbsp olive oil to the same skillet and cook chicken with the fajita spice mix until cooked through and slightly browned.

Set aside and dice.

Place one tortilla in a non-stick skillet.

Sprinkle with cheese, add chicken and peppers, then sprinkle with more cheese and cover with another tortilla.

Cook until bottom tortilla is browned, flip and brown the other side.

Slice into quarters and serve warm.
