Ingredients

  • 2 tbsp gochujang
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 1 lb ground pork
  • 2 tbsp olive oil
  • 8 oz mushrooms
  • 1½ cups onion
  • 4 cloves garlic
  • 4 cups kale
  • 2 cups carrots
  • 3 cups rice
  • 6 eggs

Instructions

    Preheat oven to 425°F.

    Cook pork.

    Sauté mushrooms, onions, and garlic.

    Mix in kale, carrots, rice, and gochujang mixture.

    Transfer to baking dish, make indents for eggs, bake 20 minutes.
